May is rapidly approaching and with it comes again the opportunity to celebrate two of the most loved things on the planet - Mexican cuisine and our moms. Treat mom to a great lunch this year with these great recipes for a jamon con manchego torta (that's Spanish for ham and cheese sammy, but an extra tasty one) and strawberry basil margarita. Muy delicioso!
Mother’s Day Jamon Serrano, Manchego and Fig Jam Baguette
Pickled Serrano Peppers, optional
Cut French baguette to desired length, then cut each piece lengthwise – do not cut all the way through the baguette.
Open French baguette and smear fig jam on both sides in the inside of the baguette.
Begin layering the sandwich by adding the jamon serrano on the bottom of the baguette, then add slices of the manchego cheese, and lastly add the arugula. If desired, you can add pickled serrano peppers to give the sandwich a bit of acidity and heat. Wrap them in the NEW Prepara Natural Beeswax Food Wraps to store until ready to enjoy!
Strawberry Basil Margarita
1/2 c. blanco tequila
1.5 oz. Cointreau
1 lime, juiced (about an ounce)
1 tbsp honey, raw if you have it
2-3 basil sprigs (chopped fine)
Pour about 1/4 cup of kosher salt onto a small side plate. Rub the juiced lime rind around the edge of two rocks glasses, then dip each glass into the plate of salt to rim the edges. Fill each glass with crushed ice or several ice cubs. Place the strawberries, tequila, cointreau, lime juice, whole basil sprigs and honey into the Prepara Tastemaker Cocktail Infuser and let sit for 15 minutes.
