4 Flavorful Twists on Grilled Chicken and Veggies

Eating healthy can seem intimidating — or worse, boring! — when you're on the outside looking in. But when you've had enough experience on the healthy eating scene, you know that’s far from the truth. Eating healthy is a fun and great way to keep in shape and feel great. That's why we've decided to share these four personal recipes for you to enjoy!

 

Fiery Lime

This is a great marinade to use on your grilled chicken, and even tastes great on veggies, too! For every pound of chicken, use one lime. Add in salt, pepper, crushed red pepper, a teaspoon of distilled white vinegar, three tablespoons of vegetable oil, and your favorite spicy blend of seasonings. Let your chicken sit in it for at least 30 minutes. For a great caramelization, add between 1 teaspoon and 1 tablespoon of honey. Add in your veggies, or simply spritz them with lime before you add them to the grill, too!

 

Chopped & Tossed

Marinade your chicken in enough balsamic vinegar to cover (but not soak) it. Add in salt, pepper, a teaspoon of honey, rosemary and dill to taste, and three tablespoons of vegetable oil. Add oil, salt, and pepper to your veggies. Grill them up to perfection, then let them cool. Chop them off and toss them into a fresh salad with arugula and avocados. You will not be disappointed!

 

Sweet & Savory

Mix 1/3 cup rice vinegar, 1/4 cup honey, and 1/4 cup soy sauce. Add the juice and seeds from 2 small or 1 medium tomato (crush rather than cut, if possible). Add onion and garlic powder to taste. Marinade your chicken. Coat your vegetables with soy sauce and brush with salt. Grill them to perfection and enjoy over brown rice or whole-grain noodles!

 

Triple & Smoke

Make a marinade from a high-end, good-quality triple sec. Add 1/3 cup of triple sec, salt and pepper to taste, crushed red peppers, and the juice of one lemon for a zesty, mildly sweet flavor. Spritz your veggies with lemon and sprinkle salt and pepper on them. Grill the chicken and let your veggies get a good smoke. This unique combination is great on its own, or even better on a multi-grain bread!


Eating healthy doesn't have to be boring. In fact, when you have a diet that you stick with, you have to learn to be adventurous and creative! There are tons of amazing recipes out there.
